A few days ago I posted a picture of Bengali Style Dry Bhuna Khichdi / ভুনা-খিচুড়ি on my Instagram And I got a very good response from your side, and I would like to thank you all for that.


Many of you asked for the recipe of this Bengali Style Dry Khichdi. Those of you who are on my telegram channel know why I couldn't post anything these days.

Here I am sharing the full recipe below, just follow them well 👇👇👇



𝐀𝐛𝐨𝐮𝐭 𝐭𝐡𝐞 𝐫𝐞𝐜𝐢𝐩𝐞


Bhuna Khichuri / Khichdi is a pure Bengali delicacy. Here the words Bhuna means fried and Khichuri / Khichdi means a rice-lentil mishmash (we all know this very well). For the dry and grainy texture like pulao, rice and lentil both are fried together thoroughly before cooking in water and hence its especially called Bhuna Khichuri. Bhuna Khichuri recipe is prepared in innumerable ways. Every house has their own style and preferences in preparing any type of khichuri / khichdi recipe. In many houses, bhuna khichuri is prepared with different types of lentils like Masoor Dal (Red Lentils) or Chana Dal (Split Chickpea) other than Moong Dal (Yellow Lentils).


But we bengalis prefer to eat Moong Dal's Khichuri / Khichdi. And here I'm sharing the Moong Dal Dry Khichdi / Bhuna Khichdi recipe.


As Bhuna Khichuri is a pure vegetarian food, It is mostly prepared in puja festivals like Durga Puja, Laxmi Puja, Saraswati puja etc. and is offered to the goddesses as Prasad / প্রসাদ.



𝐈𝐧𝐠𝐫𝐞𝐝𝐢𝐞𝐧𝐭𝐬


𝟏) Cumin / Jeera / জিরা


𝟐) Dried Chillies / শুকনো লঙ্কা


𝟑) Bay Leaves / তেজপাতা


𝟒) Cardamom / Elaichi / এলাচ (Small Size)


𝟓) Cinnamon / Dalcheeni / দারচিনি


𝟔) Mustard Oil / সরষের তেল


𝟕) Turmeric Powder / হলুদ গুঁড়ো


𝟖) Salt / লবণ (According to your taste)


𝟗) Sugar / চিনি (According to your taste)


𝟏𝟎) Green Chillies / কাঁচালঙ্কা (Optional)


𝟏𝟏) Raisins / কিশমিশ (Optional)


𝟏𝟐) Cashew / কাজুবাদাম (Optional)


𝟏𝟑) Ghee / Clarified Butter / ঘি


𝟏𝟒) Gobindobhog Rice / গোবিন্দভোগ চাল


𝟏𝟓) Moong Dal / মুগডাল


𝟏𝟔) Hot Water / গরম জল



🛑 𝐓𝐢𝐩 : Always use Gobindobhog Rice, an aromatic small grain rice for the recipe. Don’t replace it with Basmati rice.


𝐇𝐨𝐰 𝐭𝐨 𝐦𝐚𝐤𝐞 𝐁𝐡𝐮𝐧𝐚 𝐊𝐡𝐢𝐜𝐡𝐮𝐫𝐢


▪️𝐒𝐭𝐞𝐩 𝟏 : At first flame the gas and add a little Mustard Oil in the Cooker / Kadhai / Pan (Whatever you are using). Heat the oil and some Cumin, 1 Bay Leaf, 1 Dried Chilli, 2 small Cardamom. Fry them well.



▪️𝐒𝐭𝐞𝐩 𝟐 : After frying the whole spices add the Gobindobhog Rice and Moong Dal (It should be washed well) and fry them well.

Add salt, sugar according to taste and 1/2 spoon turmeric powder.



▪️𝐒𝐭𝐞𝐩 𝟑 : After roasting / frying all these things add some hot water and cover the lid for 20 - 25 minutes.



▪️𝐒𝐭𝐞𝐩 𝟒 : After 20 - 25 minutes open the lid and your Bhuna Khichuri / Khichdi is ready. If you wish you can add some raisins and cashew and mix them well or garnish with some green chillies on your Khichuri / Khichdi.

Do not overcook the khichdi / khichuri otherwise, the feeling of Jhurjhure Khichuri will not come and it'll become melty.
